Us: Dwight Loveday
Dr.
Dwight Loveday has a 75% appointment in the Food
Science and Technology Department. His interests are
in meat animal production, meat marketing and meat quality.
In addition to three other Food Science and Technology
classes, Dwight teaches three Meat Science classes:
Meat Evaluation and Grading, Meat Science and Meat Science
Lab. He has conducted an extensive amount of meat animal
carcass evaluation for genetic improvement programs,
research programs and carcass shows. Dr. Loveday served
as team leader of the lamb judging section for the Meat
Evaluation Handbook published by the American Meat Science
Association. Dwight coordinates the UT intercollegiate
meat judging program and officiates national meat judging
contests. Dr. Loveday attended the University of Tennessee-Knoxville
majoring in Animal Husbandry. After graduation, he completed
the M.S. and Ph.D. degrees at Kansas State University
in Animal Science with emphasis in meat science. Before
returning to UT in 1983, Dwight was the Extension Meat
Specialist at the University of Nebraska where he coordinated
the 4-H and FFA meat judging and carcass evaluation
programs.
